Ingredients

  • 1 portion of wholemeal noodles
  • 110g/4oz firm tofu, diced
  • Sesame seeds, toasted
  • 4 tbsp vegetable oil
  • ½ pepper (red and yellow), chopped
  • 2 spring onions, chopped
  • ½ carrot, cut into thin strips
  • 55g/2oz mushrooms, chopped
  • 110g/4oz beansprouts

For the sauce

  • ¼ cup soy sauce
  • 1 clove garlic, chopped
  • 1 cm piece of root ginger, (1 tbsp) grated
  • 1 tbsp corn flour
  • 1 tbsp agave syrup

      Method

      1. Cook noodles according to instructions.
      2. Drain and press tofu for at least 15m. Dice.
      3. Toast the sesame seeds.
      4. Mix all sauce ingredients in a small bowl and set aside.
      5. Heat the frying pan with oil until is hot but not smoking.
      6. Add the diced tofu in a hot frying pan with oil and stir fry for about another 2m – keeping the tofu moving to avoid burning. Remove from the frying pan.
      7. Stir fry the pepper, spring onion, carrot, mushrooms and beansprouts in the remaining oil for about 5-6m until soft.
      8. Stir the sauce and add it to the pan. When it becomes thick and bubbling return the tofu mix to the pan. Add cooked noodles, mix together and stir fry for 1–2m.
      9. Garnish with sesame seeds and spring onions.
